Do you ever grow tired of the same old lunch foods? I am not a big "cook" when it comes to lunch. I like to keep it simple, but every now and then, I like something a little different than your average sandwich, soup, or salad (and I try to eat something fairly healthy). These little sandwiches (or pitas) are one of my alltime favorites. We eat them a lot in the summer, and they are PERFECT for taking on picnics...you just make the filling and put it in a small container and fill up the pitas when you reach your destination. We like to take the Ranger up into the mountains behind our house and pack these babies for lunch. I also like to mix up a bit and have in the fridge so that I can throw together a quick lunch for a few days in a row. I can't even put into words how delicious these are...even though they are VERY basic...
Sherelle's Chef Salad Sandwiches
-1 pkg. pita bread (these also taste yummy on croissants)
-2-3 cups chopped iceberg lettuce
-1/2 cup shredded cheddar cheese
-1 sm. can sliced olives, drained
-1 cup cherry tomatoes, halved
-1 cup thinly sliced deli ham, sliced into small strips
-1/4-1/2 pkg. dry ranch seasoning (I like Uncle Dan's brand)
-2-3 Tbs. Mayonaisse
-2-3 Tbs. sour cream
-1 Tbs. milk
Combine all veggies, meat and cheese. Mix a bit of ranch seasoning and mayo, sour cream and milk. Stir well. You want to make a thick version of ranch. Pour over salad mix and toss well. Serve in pita pockets. (you could also add a chopped cucumber as well...I always add them in the summer when we have them in the garden)

Thanks so much for this idea. I just make homemade pitas yesterday. My son is tired of just turkey and lettuce in it! I never thought to put in a container so he could take to school. He says they get mushy if I put too much stuff in them for his lunch.. Great idea!!

Love your tablecloth- it reminds me of one my mom always used when I was growing up. I think I want to make some tablecloths now.

I always love something different for lunch. Sometimes eating the leftover mac n cheese or pb & j's just doesn't do it for me! Thanks for sharing.

What a fun idea. I'm totally going to make these! But without the olives and ranch. Have you ever tried Annie's dressings? Ohhh they're heavenly! (a little goddess would be perfect for these) I do love Uncle Dan's though... just trying to cut some cals. More recipes pleeeease. :)

I a modified version of this for lunch today. I followed you recipie, but swaped olives for bacon and ham for BBQ chicken (leftover). I added some avacado. They were so easy and YUMMY!!!
